On January 23, 2024, a staff training session on vegan catering was held at Cantonese En within the Tokyo Station Hotel. This training was part of the Muslim and Other Various Cultures and Customs Acceptance Project, organized by the Tokyo Metropolitan Government. Lodging facilities, restaurants, retail stores, and tourism-related businesses in Tokyo joined the training session free of charge.

VegeProject Japan contributed to the organization of this event and introduced Cantonese En as the venue for this training. VegeProject’s representative Haruko Kawano also attended the event as an expert on vegetarian and vegan topics.

Cantonese En is renowned for its vegan courses, which have received acclaim from a diverse range of customers both domestically and internationally. It is also one of the restaurants featured in Tokyo VegeMap.

During the training, the manager of Cantonese En introduced the restaurant, its clientele, and information about its vegan options. This was followed by a presentation from their Chef Shin Oishi, who shared details about specific menus, ingredients, and culinary innovations.

Participants deepened their understanding of ingredients, vegan culinary innovations, and hospitality while sampling the dishes offered at the venue. Feedback received included remarks on the educational value of the session and desires to apply the experience in participants’ own establishments.
