The Tokyo Government has released a booklet for caterers responding to different dietary needs, such as vegetarian, vegan and halal. VegeProject Japan supervised this project, and provided advice about plant-based recipes, ingredients and other information provided to food caterers.

The booklet introduces 15 recipes as well as 9 cooking techniques for professional chefs. Each technique is paired with applicable recipes, making this a practical guide that helps chefs improve their skills in these kinds of cuisine.

All recipes presented can freely be used as menu items in restaurants.

 

We hope this booklet will serve as an inspiration for new menu ideas for both businesses serving their first plant-based options, as well as those trying to improve the ones they already offer.
